Jaipuri Bhindi is a delicious vegetarian recipe made of Bhindi/Ladies Finger/Okra. Can be used as a side dish with the Indian bread or even had as a snack by itself. These vegan recipes can be easily made at home. This dish is made out of Okra. Also known as Ladies Finger.

    • 250 g Bhindi/Okra cut into halves and then cut into thin strips (thinner the better)
    • 1 cup gram flour (besan)
    • 2 – 3 tsp dry red chilli powder (or as per taste)
    • 1/2 tsp turmeric powder
    • 3 tsp cumin powder
    • 3 tsp coriander powder
    • 1 tsp fennel (saunf) powder
    • 1 to 2 tsp dry mango powder (amchur)
    • 2 tsp roasted sesame seeds (til)
    • 1 tbsp Vinegar
    • salt to taste
    • oil for frying


    • Combine all the ingredients and keep them aside for twenty minutes.
    • This acts like a marinade, and the Bhindi/Okra pieces soak up all the goodness of the spices and the salt to give you a lip-smacking taste.
    • The salt makes the Bhindi/Okra moist, which makes the gram flour stick to them. If the gram flour is still dry before frying the Bhindi/Okra, add a teaspoon of water as required. The mixture shouldn’t be runny, just damp enough to make the gram flour stick to the Bhindi/Okra.
    • Heat oil in a wok. Put some of the Bhindi/Okra mixture in the hot oil and fry till it is golden brown and crisp. Drain on paper towels and serve hot!
    • Tastes best with Mallika’s Butter Roti or even just as an appetiser.
