Brinjal Tawa Fry is super tempting and is a must perfect side dish for any meals. And there are a lot of variations to this recipe. In an authentic version, brinjal pieces are mixed with some spices and shallow fried in mustard oil. Here we bring you our Chef’s version from Mallika’s.

    • 1 large Brinjal – cut into rounds (not too thick/thin)
    • Salt to taste
    • ¼ cup Rice Flour
    • 2 tsp Chilli Powder
    • 1 tsp Turmeric Powder
    • 2 tsp Coriander Powder
    • 1.5 tsp Garam Masala Powder
    • 1 tsp Cumin Powder
    • 1 tsp Dry Mango Powder
    • 3 tbsp Cornflour
    • 1 tsp Lemon Juice
    • 2 tsp Ginger Garlic Paste
    • 3 tbsp Oil to shallow fry
    • Water as required


    • Take all the ingredients except Brinjals and oil in a bowl and mix to a smooth paste.
    • Add Brinjals in and toss well till the marinade is smeared well.
    • Heat oil in a Tawa/Pan and shallow fry the Brinjals on low to medium heat till it turns golden colour and is cooked well.
    • Remove to a plate and serve. Tastes best with Mallika’s Butter Roti or even just as an appetiser.
